Sample Menu

Hi Everyone!
Welcome to my sample menu page! I hope this helps you in filling out the preference sheets provided to you by your brokers. It will enable you to pick and choose the kind of things you like/don't like and you can always let me know if there is something you or your party may like that's not here. I will send a sample menu based on this one and your party's preference sheet, once I receive it, to you via email before your charter. This will be for your whole party to approve as food orders are done in advance. I am happy to send adjusted sample menus for parties with food issues/allergies (e.g. vegetarian or gluten free diets etc)

Breakfast

• Watermelon fruit basket

  This is served with a selection of bagels, smoked salmon, cream cheese, capers and sliced onions and tomato. With local jams, cereals and yogurts.

• 	Pancakes These are served with a side of fresh berries, honey, syrup and your choice of ground citrus sugar or cinnamon and chocolate. This dish is also served with a side of crispy bacon.
  	Tropical fruit platter This is served with a selection of homemade muffins, local jams, mixed cheese platter as well as yoghurt and cereals.

• Fresh fruits

  served with a selection of croissants, cheeses, yogurts, preserves and cereals.

• Creamy chive and onion scrambled eggs.

  This is served with a side of crispy bacon, mushrooms and whole-wheat and white toast.

• French toast

  served with a side of cocktail beef sausages, powdered sugar/citrus sugar, cinnamon and syrup.

• Fresh fruits platter served with homemade banana bread, cheeses, yogurt, cereals, toast and local jams.
  Eggs Benedict served on English muffins with Canadian bacon. This is served with cocktail pork sausages, grilled tomato and a side of hollandaise sauce.

(Feeling adventurous? Want to move beyond Apple and Orange? Why not try some of our South African fruit juices! Ask for mango, pear, litchi, passion fruit, berries, white and red grape and other tropical juices in your preference sheet.)

Lunch

Something light to keep the adventure flowing...

• 	Grilled chicken, bacon and brie burgers served with a large garden salad or potato salad.
  	Deli platter A variety of cold meats fresh from the deli served with an orange and almond palm tree salad, fresh breads and local hot sauce

• Rolled smoked salmon and prosciutto ham spinach salad

  This salad has cranberries, walnuts, blue cheese and pears and is accompanied by fresh breads and local hot sauces.

• Homemade Quiche Lorraine or Vegetarian Quiche

  served with a large Greek salad

• Local chicken roti's

  Boneless chicken and potatoes cooked in a mild curry sauce and wrapped in a roti shell. This is served with mango chutney, local hot sauces and salad. Vegetarian option available for veggie lovers!

• Steak Fajita's

  Mexican style marinated beef stir fried with bell peppers, finished with melted cheese in a wrap and served with a large Mexican style salad.

• Pizza's

  Large Pizza's with toppings of your choice e.g. Pepperoni, Hawaiian and vegetarian. This is served with a large avocado, red onion and feta salad.

• Caribbean chicken salad stack Chicken cooked in white wine, marinated in light mayo and mango chutney stacked with tomato, cucumber and avocado. This stack is surrounded by sprouts and toasted pine nuts.
  Peanut phad Thai Baby shrimp or chicken cooked with Thai spices and peanuts, served over Asian noodles.

• Pan Seared Tuna and mango salad

  Pan seared sesame encrusted tuna slices served on a bed of bib lettuce, mango slices and seaweed salad.

• Coconut shrimp salad

  Tiger Shrimp battered and pan fried in coconut served on a bed of fresh greens and island style slaw with homemade vinaigrettes

Snack Attack and Cocktail Hour

• 	A selection of imported cheeses served with a crackers, stuffed olives and seedless grapes.
  	Bruschetta fresh tomato, olive oil, feta cheese and basil served on a toasted garlic baguette.

• Crab cakes

  served with traditional tartar sauce and spicy island dip.

• Homemade Artichoke and parmesan dip

  served with toasted pita points

• Soy glazed seared Tuna

  served on homemade ginger and scallion pancakes with wasabi mayo

• Mini Beef skewers

  served with a homemade Thai peanut dip

• Nacho Salsa melt

  served with sour cream, salsa and guacamole dip.

• Hummus, olive tapenade and various dips

  served with strips of toasted bread and fresh vegetables.

• Mini vegetable spring rolls served with sweet chilli, plum and soy sauces.
  Homemade spinach and yoghurt dip served with toasted triangles

Beverages

Dinner

A well deserved meal after a 'tough' day in paradise...

• Mahi Mahi Spiced rubbed Mahi Mahi cooked on a hot skillet stacked on orange and white wine risotto with asparagus spears. Served with a homemade white wine dill sauce.
  Grilled Chicken Linguine Boneless chicken marinated in lemon juice, olive oil, herbs and spices. Grilled on the barbeque and served sliced on a bed of Linguini pasta. This is served with a homemade Sicilian tomato sauce and grilled butternut squash or zucchini.

• Pan seared Tuna steaks

  This Ahi is dusted with Caribbean fish spices served with sticky jasmine rice, honey glazed vegetables and teriyaki sauce.

• Pork tenderloin

  Pork tenderloin marinated in a homemade local jerk sauce , grilled on the Barbeque and served sliced over sweet potato wedges with a homemade apple and calvados sauce. This is also served with grilled Mediterranean vegetables.

• Mild Tomato Shrimp Curry

  This delicious non-spicy dish is served with jasmine rice and crushed cashews.

• 	Filet Mignon Beef tenderloin steaks marinated in balsamic, honey and mustard grilled to perfection on the barbeque served under garlic green beans and a potato rosti with a drizzle of creamy pepper sauce
  	Rack of Lamb Lamb marinated in red wine and mint served medium rare around a bed of chive and garlic mash potatoes and vegetables, surrounded by a port and red wine reduction.

• Stuffed Chicken Breasts Boneless breasts stuffed with cream cheese and sundried tomatoes, wrapped in bacon and baked in white wine. This dish is served with baby new potatoes and vegetables.
  Thai Green Curry Delicious medium spiced Thai green pork or chicken curry served with pineapple and pepper stir fried rice.
